Happy Monday, sweet friends! Another week of quarantine in the books and somehow, it’s now August. July came and went and for some odd reason, I am really excited for this month. I have absolutely nothing big on the calendar but out of the past few summer months, this month already feels like it’s going to be really good.
The other day, a memory popped up on Facebook of me being in NYC at a conference 2 years ago. While I thought about how I would love to be traveling and having fun like that again, I quickly remembered that I went to a rooftop bar and paid $15USD for a glass of cheap champagne with a popsicle. All for aesthetics. Fifteen whole dollars on something that I knew would only cost me a few dollars to make at home. So, I headed to my Trader Joe’s and picked up my neighbors’ favorite fruity popsicles and a cheap bottle of champagne. And because I remembered how much flavor the popsicle brought to the champagne, it perfect sense to save and get a bottle for $6 that had great reviews.
With $9 of materials, I was able to make four champagne & popsicle drinks that actually tasted better than what I remembered my $15 rooftop drink tasting like. Just for fun, I figured why not replicate the entire experience and headed to our rooftop to enjoy my drink. And just like that, I had my full NYC drink experience for less than $3 with no fuss about parking or car services.
I shared this cocktail after shooting last week and y’all, I was seriously blown away by the amount of people who had never tried this drink! It’s always exciting introducing my audience to something new and this was no exception.
Here are some of the common questions people asked:
- Does the champagne have to be expensive/nice? No. It’s probably better that it isn’t because it will blend (obvi) with the popsicle. I always look up reviews and this one was a top fav from TJs.
- Can I use a cream popsicle? I wouldn’t recommend it. A fruit popsicle works the best.
- Is the drink really sweet? Yes and no. The drink isn’t sweet until you get to the bottom. When the popsicle breaks, I suggest mixing it in with the champagne so all the sweetness isn’t at the bottom. However, when that does happens to me, I use it as an excuse to pour more champagne 🤷♀️
- How many drinks can you make with this? As many as you want. The box of popsicles I bought came with 4. So I split the champagne evenly in 4 glasses to make 4 drinks total. The cost breakdown is less than $3 each.
